Muffin recipe for hypoglycemics -
only a small amount of honey, no wheat, no yeast.

	1/4 cups Organic walnuts (chopped in large pieces)
	1/2 cup Organic quinoa flour
	1/2 cup Organic quinoa flakes
	2 Teaspoons baking powder
	1-1/2 Tablespoons honey
	2 eggs
	2 - 3 ripe bananas
	1 teaspoon baking soda
	Optional: Small handful raisins (only if tolerated by hypoglycemic)
Mix all dry ingredients, except walnuts (or) pecans. Mix banana, eggs and honey in separate bowl. Combine both mixtures - mix...then add walnuts (or) pecans. Grease muffin tins - fill 1/2 full with mixture. Bake in 400 degree oven for 20 minutes. Test for doneness by inserting toothpick. If it comes out clean, muffins are done. If not quite done, shut oven off and leave in oven for 5 more minutes.
