Here are two recipes we love: Recipe #1: Gluten-Free Happy Apple CrispWho doesn’t love some warm apple crisp on a chilly day? It’s incredibly easy to make, and it makes for wonderful leftovers. In this recipe, we replaced the traditional flour in the topping with coconut and almond flours in order to keep it gluten-free. Ingredients:
  • 5 large apples peeled, cored, and sliced
  • 1/4 cup cashew milk
  • 2 Tbs lemon juice
  • 2 Tbs pure maple syrup
  • 1 Tbs of coconut sugar
  • 2 tsp cinnamon
  • 1/2 tsp allspice
Crumble Topping
  • ½ C almond flour
  • ¼ C coconut flour
  • ¼ C crushed walnuts (optional)
  • 1 Tbs coconut sugar
  • 2 tsp ground cinnamon
  • 3 Tbs melted coconut oil
  • Pinch of Himalayan pink salt
  • ½ C Organic Happy Rolled Oats
  • ½ C Organic Sprouted Maple Quinoa Happy Granola
Directions:
  1. Preheat oven to 375-degrees F and grease an 8" x 8" baking dish
  2. In a medium bowl, combine apples with cashew milk, lemon juice, maple syrup, coconut sugar, cinnamon, and allspice
  3. In a separate bowl, add all the ingredients for the Crumble Topping and gently mix with your hands. You want the mixture to be consistent but crumbly. Add a small amount more of coconut oil if it seems too dry
  4. Pour the apple mixture into the prepared dish
  5. Using your hands, evenly sprinkle the crumble topping over the apples
  6. Bake for 25 minutes or until apples are tender and can be easily pierced with a fork
  7. Serve warm and enjoy!
Recipe #2: Happy Acai BowlWe’re huge fans of smoothie bowls, and granola is one of our favorite toppings. Not only does it add a satisfying crunch, but it also doesn’t require any extra prep work ;)  Ingredients:
  • 1 packet of Frozen Acai puree
  • ¾ C Greek Yogurt
  • 1 C Organic Spinach
  • Juice from ½ Lemon
  • 1 C Frozen Raspberries
  • 1 C Frozen Blueberries
Toppings
  • Pomegranate Seeds
  • Sunflower Seeds
  • Kiwi
  • Bakery On Main Organic Sprouted Grains & Honey Happy Granola
Directions:
  1. Put all bowl ingredients into a food processor. Blend on high until all ingredients are consistent and smooth.
  2. Spoon into a bowl and top with Bakery On Main Happy Granola, Sunflower and Pomegranate Seeds, and Kiwi slices.
  3. Enjoy!!
