These Mexican Quinoa Wraps taste like a fresh fiesta! Perfect for your Cinco de Mayo party or for #WhatsForDinnerWednesday. All you need to make these is a bunch of tortillas, lots of vegetables, black beans, and some cooked quinoa for protein and fiber. What you will really love: you can whip them up in 25 minutes ;)  INGREDIENTS
  • 1 cup quinoa, uncooked
  • 1 15oz. can of Eden Organic Black Beans
  • 1 onion, chopped
  • 1 jalepeno, chopped, seeds removed
  • 1 red pepper, diced
  • 2 small yellow or green squash
  • Annie's Barbecue Sauce
  • Gluten-free tortillas
  • Cooking oil of choice
  • Salt and pepper to taste
Garnishes:
  • Dean's Famous House-made Guacamole
  • Vegan Sour Cream
  • Vegan Cheese
INSTRUCTIONS​
  1. Cook the quinoa according to the manufacturer’s instructions.
  2. In the meantime, prepare the vegetables. Peel and chop the onion and squash, seed and dice the jalapeno and red pepper.
  3. Heat a saucepan and add a little bit of oil. Transfer the onion, chili, squash, and red pepper and sauté for about six minutes until they begin to soften.
  4. When the quinoa is ready, take a wrap and fill it with the vegetables mix and black beans. Add a bit of guacamole and sour creme, plus a dash of barbecue sauce, if you like.
  5. Roll and enjoy.
