With the summer days quickly approaching, it’s the perfect time to get outside and fire up the grill. Whether you are top chef status or a novice chef in the kitchen, anyone can be a grill master. Skip the hot dogs and overcooked burger patties, and try some of these delicious healthy grilled recipes instead.   Healthy Memorial Day Menu:Grilled Caesar Salad with Creamy Lemon Tahini DressingChicken Pesto KebobsGrilled Pineapple  Grilled Caesar Salad with Creamy Lemon Tahini Dressing(vegan, gluten-free, dairy-free) Ingredients:
  • 1 large romaine heart, cut in half lengthwise
  • Olive oil spray
  • 1 avocado, diced
  • ½ cup chickpeas, drained and rinsed
  • 1 teaspoon olive oil
  • ½ teaspoon garlic powder
  • For the dressing:
  • ¼ cup lemon juice
  • 2 tablespoons garlic hummus
  • 1 tablespoons tahini paste
  • 2 tablespoons water
  • 1 teaspoon Worcestershire (use a vegan brand)
  • 4 tablespoons raw cashews, soaked in water
  • Sea salt, to taste

  • 1 cup cherry tomatoes
  • 2 zucchini
  • 1 pound boneless, skinless chicken breasts, cut into 1 inch cubes
  • 1 cup pre-made pestos
  • Salt and pepper, to taste

  • 1 pineapple, cut into thick slices
  • 2 tablespoons pineapple juice
  • 1 teaspoon coconut sugar
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • (optional toppings) yogurt, sliced almonds, coconut flakes
