There are countless ways to enjoy both varieties of Bakery On Main’s Organic Happy Oats.  Here are three holiday recipes we love: Recipe #1: Eggnog Oatmeal Pancakes Enjoy a warm and festive way to start your mornings! Eggnog Oatmeal Pancakes Ingredients:
  • 2 C. Bakery On Main Certified Gluten-Free Organic Happy Quick or Rolled Oats
  • 2 C. eggnog
  • 2 cage free, organic eggs
  • 1/4 C. butter
  • 2 T. raw sugar or agave
  • 1 tsp. baking powder
  • 1 tsp. aluminum-free baking soda
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 cube butter
  • 3/4 C raw sugar or agave
  • 1/2 C eggnog
  • 1/4 tsp. gluten-free vanilla
  • 1 tsp. aluminum free baking soda
Directions:
  1. For the pancakes, mix Bakery On Main Organic Happy Rolled or Quick Oats and 2 C eggnog then refrigerate overnight or at least 2 hours
  2. The following morning add the eggs, 1/4 C butter, 2 T sugar, 1 tsp. baking powder, 1 tsp. baking soda, 1 tsp. cinnamon, 1 tsp. nutmeg & 1/2 tsp. salt
  3. Fry on a non-stick griddle or well-greased pan
  4. For the eggnog syrup, bring 1 cube butter, 3/4 C sugar and 1/2 C eggnog to a boil. Remove from heat and add vanilla and baking soda.
  5. Serve hot over oatmeal pancakes.
Recipe #2: Eggnog Gingerbread Overnight OatsA sweet start to your day, packed with wholesome organic oats and holiday flavor!  Ingredients:
  • 3/4 C. rolled oats
  • 2 tsp. chia/flax mix
  • 1 scoop Vanilla Protein Powder
  • 1 T. Molasses
  • 1 T. Maple Syrup
  • 1/4 tsp. ground ginger
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 C. eggnog (or dairy free version)
Directions:
  1. Put all ingredients in a glass jar or bowl with lid
  2. Shake to combine well
  3. Put in the refrigerator for at least one hour to overnight
  4. Once ready to eat, remove lid, add your favorite toppings such as raisins or walnuts, and enjoy!
Recipe #3: Rosemary Oaty Chicken NuggetsYou can’t go wrong with this savory and comforting recipe! Rosemary Oaty Chicken Nuggets Ingredients:
  • 2 lbs. boneless/skinless chicken breasts or tenders
  • 2 eggs
  • 1 T. fresh rosemary, chopped
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 1/2 C. Bakery On Main Organic Happy Rolled Oats or Organic Happy Quick Oats
  • 1 T. gluten-free dijon mustard
  • 2 tsp. raw honey
  • 1/2 tsp. gluten-free Worcestershire
Directions:
  1. Preheat oven to 400°
  2. Cut chicken breasts or tenders into 1′ cubes
  3. In a bowl, whisk eggs together
  4. In another bowl combine rosemary, salt, pepper and Bakery on Main Organic Happy Oats
  5. Dip chicken cubes into whisked eggs then generously coat chicken nuggets with oat mixture
  6. Place dipped chicken nuggets on a baking sheet and bake at 400° for 20-22 minutes or until cooked through
  7. Meanwhile, combine dijon mustard, honey and gluten-free Worcestershire and mix well
  8. Serve with warm rosemary oaty chicken nuggets
