Why not add a little nutritious protein in your holiday baking? PlantFusion put together a delicious recipe for chocolate chip almond butter cookies using their LEAN protein powder.  Yields 12 Cookies  Ingredients:                                                                             
  • ½ Cup Natural Drippy Almond Butter
  • ¼ Cup Coconut Sugar
  • ¼ Teaspoon of Salt (only if almond butter isn’t salted)
  • 1 Large Egg
  • 2 Tablespoons Unsweetened Almond Milk
  • ½ Teaspoon Vanilla Extract
  • Cup PlantFusion LEAN Chocolate Brownie
  • 2 Tablespoons Coconut Flour
  • 1/8 Teaspoon Baking Soda
  • 2 Tablespoons Chocolate Chips
Instructions:
  1. Preheat oven to 350°.
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl, combine almond butter, coconut sugar, salt, egg, almond milk and vanilla extract. Mix until ingredients are well combined.
  4. Next, mix in PlantFusion LEAN, coconut flour and baking soda until well blended. Fold in chocolate chips.
  5. Use a small cookie scoop to drop cookie dough by the tablespoonful onto prepared baking sheet. The dough will be slightly sticky. Slightly flatten the tops of the cookies.
  6. Bake for 9 – 11 minutes until golden brown on the edges. Allow cookies to cool on cookie sheet for 5 minutes before transferring to a wire rack to finish cooling.
