Why not add a little nutritious protein in your holiday baking? PlantFusion put together a delicious recipe for chocolate chip almond butter cookies using their LEAN protein powder. Yields 12 Cookies Ingredients:
- ½ Cup Natural Drippy Almond Butter
- ¼ Cup Coconut Sugar
- ¼ Teaspoon of Salt (only if almond butter isn’t salted)
- 1 Large Egg
- 2 Tablespoons Unsweetened Almond Milk
- ½ Teaspoon Vanilla Extract
- Cup PlantFusion LEAN Chocolate Brownie
- 2 Tablespoons Coconut Flour
- 1/8 Teaspoon Baking Soda
- 2 Tablespoons Chocolate Chips
- Preheat oven to 350°.
- Line a baking sheet with parchment paper.
- In a medium bowl, combine almond butter, coconut sugar, salt, egg, almond milk and vanilla extract. Mix until ingredients are well combined.
- Next, mix in PlantFusion LEAN, coconut flour and baking soda until well blended. Fold in chocolate chips.
- Use a small cookie scoop to drop cookie dough by the tablespoonful onto prepared baking sheet. The dough will be slightly sticky. Slightly flatten the tops of the cookies.
- Bake for 9 – 11 minutes until golden brown on the edges. Allow cookies to cool on cookie sheet for 5 minutes before transferring to a wire rack to finish cooling.
