When the summer heat hits, no one likes to use their oven or stove (at least we don't). Beat the heat by making these Raw Curry Zucchini Noodles - no stove-top, no oven, no cooking, and 10 minutes from your fridge to your plate. What's better than that on a July summer night?   Ingredients:
  • 3/4 cup Harvest Bay Coconut Water
  • 3-4 medium local New Jersey zucchinis
  • 2 cups Dean's raw organic cashews
  • 1 large garlic clove
  • 1/4 of a large avocado
  • 2 teaspoons curry powder
  • 1 teaspoon red chili paste
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon sea salt​​
  1. Wash zucchinis and chop off the ends. Spiralize (Use the one that makes spaghetti-sized noodles).
  2. In a blender, combine all other ingredients and blend on high until the sauce becomes very smooth.
  3. Toss zucchini noodles with curry sauce in a large bowl until thoroughly coated.
  4. Serve and enjoy!
