Recover from your holiday indulgences with this simple and comforting 15-Minute Healing Miso Soup! It's loaded with refreshing plant-based ingredients and it's simple make. Ingredients:
- 4 cups water
- 1/2 cup chopped organic lacinato kale
- 1/2 cup chopped organic scallion
- 1 cup chopped organic rainbow carrots
- 1 cup chopped organic mushrooms
- 1/4 cup firm organic tofu, cubed
- 3-4 tbsp chickpea miso paste -- we used Miso Master
- Optional: 1 sheet (1/4 cup) nori, cut into large rectangles
- Place water in a medium sauce pan and bring to a low simmer.
- Add nori and simmer for 5-7 minutes.
- In the meantime, place 3 tbsp of miso into a small bowl, add a little hot water, and whisk until smooth (this will ensure it doesn’t clump). Add to the soup broth and stir.
- Add remaining ingredients to the pot and cook for another 10 minutes. Taste the broth and add more miso or a pinch of sea salt if desired.
- Serve warm & enjoy!
