Cooking Time: 10 minutes Serving: 1 (recipe can be multiplied) INGREDIENTS
  • 1/2 cup quick oats
  • 1 cup water or plant-based milk of choice (we used half water, half Ripple milk)
  • 1 small banana, peeled
  • 2 dates, pits removed
  • 6 pecans
  • 1/2 tsp cinnamon
  • Optional: additional pecans & sliced bananas for topping
  1. Add banana, dates, cinnamon, and pecans to blender or food processor; pulse until you have a thick paste.
  2. Transfer the thick paste to a small pot and cook over medium-low heat -- constantly stirring -- about 2 minutes or until bananas become fragrant.
  3. Add liquid and bring mixture to a boil.
  4. Reduce to a simmer and add oats; cook uncovered for 1-2 minutes, stirring occasionally.
  5. Remove from heat and serve.
  6. Optional: top with additional pecans & sliced bananas.
