Our Weekend Sales are back and better than ever in 2016, and one of the first great deals we have for you is on Field Day Organic Canned Black Beans, on sale for 10/$10! That got us thinking about this recipe we have for Vegan Black Bean Chili Dip. Just look at it. How could you not instantly think of it when someone mentions black beans? PREP TIME: 10 mins     |     TOTAL TIME: 25 mins      |      SERVINGS: 12 INGREDIENTS
  • 1 1/2 cups cashews, soaked for at least 1 hour, drained
  • 1 orange bell pepper, chopped
  • 1 cup unsweetened almond milk
  • 2 tsp. chili powder
  • 1/4 cup nutritional yeast
  • 1/4 cup minced onion
  • 2 tbsp. taco seasoning
  • 2-15 oz. cans black beans, rinsed and drained
  • 12 oz. fresh salsa
  • Cilantro and sliced green onions (optional)
INSTRUCTIONS
  1. Drain and rinse the soaked cashews.
  2. Place the cashews, bell pepper, almond milk, chili powder, and nutritional yeast in a blender. Puree until thick, creamy, and cheese-like, about 3-4 minutes.
  3. In a large saucepan, add the minced onion, taco seasoning, black beans, and fresh salsa over medium heat. Stir constantly until heated through, about 7-8 minutes.
  4. Add in the "cheese" sauce and stir to combine.
  5. Season to taste with salt and pepper.
  6. Garnish as desired and serve with your favorite chips or dippers.
