Trying to eat the rainbow?  This deliciously colorful, crunchy salad is perfect as a make-ahead, mason jar lunch (prep on Sunday and have a no-heat lunch all week!), a potluck, or a lighter healthy dinner for 4-5 people. INGREDIENTS  Chicken Ingredients
  • 2 1lb boneless chicken breasts
  • Braggs liquid aminos (or low sodium soy sauce)
  • Pepper
 Salad Ingredients
  • 1 bag broccoli slaw
  • 1 cup salad greens of choice (kale adds a nice crunch), chopped
  • ½ cup red cabbage (roughly 1/3 of a small head), chopped
  • 2 large carrots, shredded
  • 1 cucumber, shredded or cubed
  • 1 avocado, cubed
  • 4 green onions / scallions, chopped
  • ¼ cup cilantro (optional), chopped
  • ½ cup peanuts (or sub in cashews if desired)
  • ¼ cup crispy fried onions (optional)
  • 1/8 cup sesame seeds
 Dressing Ingredients
  • ¼ cup fresh ground, unsweetened peanut butter
  • ¼ cup Braggs liquid aminos (or low sodium soy sauce)
  • ¼ cup vinegar
  • ¼ olive oil (or neutral-tasting oil of choice)
  • 2 tbsp sesame oil
  • Juice of 1 lime
  • 1 tbsp minced ginger
  • 1 tbsp red pepper flakes
INSTRUCTIONS Chicken Prep
  1. Preheat the oven to 375°F
  2. Lightly coat the chicken with the liquid aminos and season to taste with pepper.
  3. Sear the chicken over high heat using your cooking oil of choice (the chicken breast should sizzle when you place it in the pan). Chicken is ready for the oven when the outside is slightly browned and looks ready to eat.
  4. Transfer to oven. Bake for 15-20 minutes, until the internal temperature reaches 165. (*For faster, one pan cooking, slice the chicken in half length-wise to create 4 thinner pieces).
  5. Let rest for 20 minutes, then cut into cubes.
Salad Prep
  1. While the chicken is cooking in the oven, prep and assemble the salad ingredients into a large bowl. Set aside.
  2. If prepping ahead for lunch or a party, leave the crispy onions off to the side so they don't get soggy.
Dressing Prep
  1. Place all dressing ingredients in a blender or food processer and blend until combined. No blender? You can also transfer it into a container with a lid and shake vigorously.
Assembling the Salad
  • If serving immediately: Toss everything together in a large bowl and serve.
  • If bringing to a party: Toss everything together except the dressing and crispy onions, which can be served on the side. Be sure to keep the salad at a safe temperature.
  • If prepping a make-ahead lunch: Divide ingredients up equally between containers; layer the chicken first, then salad. Keep the crispy onions and dressing in separate compartments / containers or use this mason jar hack.
