Cooking Time: 5 minutes Serving: 1 (recipe can be multiplied) INGREDIENTS
  • 1/2 cup oats or oat flour
  • 1 tsp baking powder
  • 1 small banana, peeled
  • 1 egg
  • 2 tsp matcha powder
  • 1 tsp cooking oil of choice (we used coconut oil)
  • Your choice of topping (we used real maple syrup)
INSTRUCTIONS
  1. Add dry ingredients to blender, and blend until it looks like a homogeneous powder.
  2. Add banana and egg, blend until evenly combined.
  3. Heat/Melt the cooking oil in a large skillet or griddle over medium heat.
  4. Ladle the mixture into the pan--should yield about two pancakes.
  5. Cook until the pancakes can be easily flipped--about 2-3 minutes.
  6. Flip the pancakes and cook for another 1-2 minutes, or until they easily slide out of the pan.
  7. Add your favorite topping(s) and enjoy!
