These Vegan Miso Bowls are absolutely delicious and are super easy to make. Miso is a very good source of manganese and copper as well as a good source of zinc. Read more about the benefits of miso here. INGREDIENTS
  • 3 cups sliced organic shiitake mushrooms
  • 3 organic scallions, chopped
  • 12 ounces soba noodles
  • 6 cups Cadia vegetable broth
  • 1/3 cup Miso Master organic miso paste
  • Nori sheets
  • Organic green kale
  • Woodstock organic tofu
  1. Prep: slice/chop mushrooms, scallions, and tofu.
  2. Cook soba noodles according to package instructions.
  3. Bring the broth to boil.
  4. Put miso in a bowl and add a ladleful of hot broth; whisk until smooth.
  5. Add the miso-broth mixture back to the rest of the broth with the mushrooms and tofu. Cook for 5 minutes.
  6. Add drained noodles, garnish with scallions, and serve.
