Who doesn't love a good pesto? It's not only extremely versatile, it's also extremely delicious. And while there are tons of different ways to make it, this one is one of our favorites. INGREDIENTS
  • 1 clove garlic
  • 1/2 small shallot, roughly chopped
  • 1 tsp lemon juice
  • handful parsley, roughly chopped
  • handful kale, roughly chopped
  • handful basil, roughly chopped
  • 1 tbs chives, roughly chopped
  • ~1/4 cup olive oil
  • salt & pepper to taste
  1. Start by placing the garlic and shallot into the food processor and pulse until finely chopped.
  2. Then add the lemon juice, parsley, kale, basil, and chives. Pulse a few times to mix these ingredients together and then set it to run continuously.
  3. With the food processor running, very slowly drizzle the olive oil in until everything is the consistency of a pesto. You may need more or less of the olive oil depending on how big a “handful” of herbs is to you. You may need to turn off the food processor and push herbs down the side of the bowl with a spatula every once in a while.
  4. Season to taste with salt and pepper.
