There's nothing better than fresh local organic sweet corn! Take it to the next level by grilling it and topping it with homemade vegan lime cream, cilantro, and hemp seeds.   Serves 6 (recipe is easily modified to serve as many or few as you’d like!)   Ingredients:
  • 12 ears of fresh organic local sweet corn
  • 1 cup of organic cashews (we like to soak them in water for at least 4 hours)
  • 1/3 cup fresh organic lime juice (about 3 limes juiced)
  • 3 tablespoons coconut milk
  • 1/8 teaspoon sea salt
  • 1/4 cup water
  • 1/2 bunch chopped fresh organic cilantro
  • Hemp seeds to garnish
    Instructions:
  1. Preheat grill (on a gas grill medium/low heat is best).
  2. Remove husks and silk from corn, leaving a bit of the stalks to hold onto when eating.
  3. Prepare lime cream by combining cashews (drained) with lime juice, coconut milk, salt, and water. Blend until creamy. Add additional water, one tablespoon at a time, if needed. The cream should be thin enough to easily pour but not too watery.
  4. Grill corn over medium heat, turning often, until cooked through and slightly charred.
  5. Place the grilled corn on a platter, drizzle with cream, sprinkle generously with cilantro, hemp seeds, and sea salt.
  6. Enjoy!
