We are loving cauliflower rice lately! It was only a matter of time before we stuffed it inside peppers and called it dinner (oh, and of course added tons of vegan cheese).   This recipe is simple, requiring just six basic ingredients and easy instructions that result in DELICIOUS results.   Ingredients:
  • 1 bag of cauliflower rice
  • 4 green peppers
  • Olive oil
  • Salt & pepper
  • 4 slices of vegan cheese (we used Follow Your Heart)
  • Optional spices: cumin, chili powder
  • Optional toppings: avocado, lime, cilantro, salsa, hot sauce
   ​ Instructions:
  1. Saute cauliflower rice in an oiled pan for 8 minutes.
  2. Pour cooked cauliflower rice into a bowl. Mix in oil, salt, and spices to taste.
  3. Cut bell peppers in half and remove seeds. Stuff with cauliflower rice.
  4. Bake at 375°F for about 40 minutes.
  5. After 40 minutes, put vegan cheese on top of each pepper. Broil peppers until vegan cheese melts (5 minutes or less).
