It's always a pleasure having Jessica Jarmer teach us how to make delicious vegan food at home, but this last class may have generated one of our new favorites: vegan pulled pork. Yum! It's a perfect summertime BBQ dish for when you just aren't feeling a veggie burger. Missed the class? No problem -- we have the recipe for you below. Want to attend a future class? Visit our News & Events page to see what's on the calendar. Now without further ado, vegan pulled pork: Vegan Pulled "Pork" Dry Ingredients
  • 1 cup vital wheat gluten
  • 2 tsp. onion powder
  • 1 tsp. garlic powder
  • 1/4 tsp white pepper
Wet Ingredients
  • 1/2 block firm tofu, drained
  • 2/3 cup water
  • 2 Tbsp. miso paste
  • 1 Tbsp. olive oil
  • 1 Tbsp. A1 or another steak sauce
  • 1/2 tsp. sea salt
Spice Rub
  • 2 tablespoons of salt
  • 2 tablespoons of sugar
  • 2 tablespoons of brown sugar
  • 2 tablespoons of ground cumin
  • 2 tablespoons of chili powder
  • 2 tablespoons of freshly cracked pepper
  • 1 tablespoon of cayenne pepper
  • 4 tablespoons of paprika
Instructions
  1. Mix the dry ingredients, set aside.
  2. Blend the wet ingredients until smooth.
  3. Add the wet to the dry and knead for 5 minutes to activate the gluten.
  4. Take 2 large sheets of aluminum foil and lay them on top of each other.
  5. Sprinkle the spice rub seasoning onto the foil.
  6. Place the dough onto the seasoning and flatten out.
  7. Add spice seasoning to the top side.
  8. Fold the foil over the dough and crimp the sides.
  9. Bake at 350°F for 90 minutes.
  10. Allow to cool and place in the fridge for 4 hours.
  11. When cooled, unwrap and pull the "meat" apart, tearing with the grain.
Vegan Cole Slaw  Ingredients
  • 1/2 cup apple cider vinegar
  • 1/2 cup white vinegar
  • 2 Tbsp. sugar
  • 2 tsp. hot sauce
  • 1/2 tsp. crushed red pepper flakes
  • 1 tsp. sea salt
  • 1/4 tsp. ground black pepper
  • 1 head of green cabbage, cored and shredded
Instructions
  1. Mix the wet ingredients and pour over the cabbage.
  2. Set aside to allow the flavor a to come together.
Vegan “Pulled Pork” Sandwich Ingredients
  • 1 tbsp. olive oil
  • 1 serving Vegan “Pulled Pork”
  • Barbecue Sauce to taste
  • Vegan Cole Slaw to taste
Instructions
  1. In a medium sized pan over medium high heat, add 1 tbsp. olive oil and fry the "meat"
  2. Mix one cup of good quality barbecue sauce with the shredded meat and broil on the middle rack of the oven until the tips of the meat are browned
  3. Place sauced meat on a vegan bun and top with coleslaw
      .
