This amazingly versatile salad isn't just easy to make -- it's a huge crowd pleaser.  ​​The real star of this dish is the dressing. I find that people are generally impressed when you make your own, but it couldn't be easier. Just throw everything into a blender and *poof* you've got a delicious dressing made with clean ingredients. Now, I'll be honest, the dressing isn't the prettiest, but it's darn delicious. However, if you want a prettier dressing, swap the traditional balsamic for a white balsamic, and use olive oil rather than coconut oil. This will smooth it out and give it a prettier pink color. While we're on the topic of dressing, I should mention you'll likely end up with extra. If you store it in an air-tight container, it generally keeps for a few days in the fridge (if you can resist it for that long!).   The salad itself is where the real versatility comes in. I'm the type of person who likes to experiment when I cook, and I tend to prepare things a little differently each time I make them. I've made this salad many times, and have swapped in / added the following ingredients with great success:
  • Arugula (in place of the spring mix)
  • Blackberries
  • Blueberries
  • Pomegranate
  • Chopped apple
  • Balsamic-roasted brussels sprouts (chilled)
  • Walnuts (in place of the pecans)
  • Grilled chicken (when I want to make a meal of it)
The key to this salad (and really to any recipe) is to customize it to your taste. Without further ado, here's the official recipe: INGREDIENTS Salad
  • 1 [5oz.] package Olivia's organic spring mix (New Low Price: $2.99)*
  • 1/2 to 1 c organic strawberries, sliced
  • 1/2 c organic blue cheese crumbles
  • 1/2 c organic pecans, roughly chopped
Dressing
  • 2 c organic strawberries
  • 1/2 c organic balsamic vinegar
  • 1/4 c organic coconut oil
  • 1 tsp minced organic garlic
  • 1 tbsp organic poppyseeds
  • 1 tsp organic dijon (optional)
  • 1/8 tsp salt (to taste)
INSTRUCTIONS Salad
  1. Pour the spring mix into a large salad bowl
  2. Add the strawberries, blue cheese, pecans, and any other additional toppings over top
  3. Toss ingredients together when ready to serve
Dressing
  1. Add all ingredients, except for the poppyseeds, to a blender
  2. Blend until smooth
  3. Stir in poppyseeds and serve
