A healthier low carb pizza? Sign us up! These gluten-free zucchini pizza boats make the perfect pizza without all the empty calories ;)
Ingredients:

4-5 medium zucchini, halved lengthwise

1 tablespoon olive oil

1 cup marinara sauce on

1½ cups mozzarella cheese, shredded

2 cloves garlic, minced

1 teaspoon oregano, fresh or dry

Salt and pepper to taste

Instructions:

Pre-heat the oven to 400°F.

Line a sheet pan with foil or parchment paper and set aside.

In a small bowl, combine garlic, olive oil, and oregano.

Lay zucchini halves on prepared baking sheet. Season with a sprinkle of salt and pepper, and then brush with garlic olive oil mixture.

Top with about a 2 tablespoons of marinara sauce each and then add a generous handful of shredded mozzarella cheese.

Bake 18-20 minutes or until the cheese is bubbly and almost golden. Remove from oven and serve warm.

Eat them with your hands (this is pizza after all!) or use a fork and knife. Enjoy!
