We can't imagine Thanksgiving dinner without mashed potatoes--they are a holiday staple! These creamy, melt-in-your-mouth vegan mashed potatoes are on another level. And you can't have mashed potatoes without gravy ;) Mashed Potatoes Ingredients: 
  • 6-8 medium organic yukon potatoes (if large, cut in half)
  • 2 tsp sea salt
  • 1 tsp ground black pepper
  • 5-6 cloves roasted garlic
  • 4 tbsp Earth Balance, melted/softened
  • 1/4 cup fresh scallions for topping
  1. Place potatoes in a large saucepan or pot and cover with water. Bring to a light boil over medium-high heat, add 1 tsp of sea salt, cover and cook for 25-30 minutes or until very tender. They should effortlessly slide off a knife when pierced.
  2. While the potatoes are cooking, chop up your scallions and measure out your Earth Balance.
  3. Once tender, drain your potatoes and place them back in the hot pot off the heat for 1 minute to evaporate any additional water. Then transfer to a large mixing bowl.
  4. Mash your potatoes using either a potato masher until fluffy.
  5. Add in Earth Balance, garlic, salt, and black pepper, and stir to combine. Taste and adjust seasonings as needed.
  6. Lastly top with scallions, stir and serve as is or with the below easy gravy recipe!
5-Minute Vegan Gravy Ingredients:
  • ¼ cup Bob's Red Mill Organic Whole Wheat Pastry Flour
  • 2 tablespoons extra virgin olive oil
  • 2 cups Pacific Foods Organic Vegetable Broth
  • 1 tablespoon nutritional yeast
  • 1 tablespoon low-sodium tamari
  • ½ teaspoon dried thyme, crushed
  • ½ teaspoon garlic powder
  • Fine grain sea salt & freshly ground black pepper to taste
  1. Heat a medium saucepan over low-medium heat. Add the flour and extra virgin olive oil and stir to combine. The texture will be thick.
  2. Add the vegetable stock and nutritional yeast and whisk until smooth.
  3. Turn the heat up to medium-high, then whisk in the tamari, thyme, and garlic powder and bring to a boil.
  4. Reduce the heat to low and continue stirring until thickened (1-2 more minutes). Season with salt and pepper to taste. Serve over the potatoes.
