It's always a pleasure having Jessica Jarmer teach us how to make delicious vegan food at home, but this class was a special one: we made a vegan Thanksgiving turkey! Missed the class?   • 1 gallon water
  • 4 large onions, chopped
  • 4 stalks of celery, chopped
  • 9 stalks of parsley
  • 9 cloves of garlic, crushed
  • 1/2 cup nutritional yeast
  • 2 Tbsp. tamari
  • 4 tsp. sea salt
  • 2 tsp. cane sugar
  • 8 sprigs of thyme
  • 2 tsp. dry rubbed sage
  • 1 sprig rosemary
  • 2 bay leaves
  • 1 tsp. peppercorns
Turkey "Meat" Dry Ingredients:
  • 2 cups vital wheat gluten
  • 1/4 cup whole wheat pastry flour
  • 1 1/2 Tbsp. onion powder
  • 2 tsp. garlic powder
Wet Ingredients:
  • 10 oz. tofu, pressed
  • 1 1/2 cup water
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. white miso
  • 2 tsp. sea salt
  • 1 Tbsp. nutritional yeast
  • 1 tsp. poultry seasoning
Instructions Simmering Broth: Add all of the ingredients and bring to a boil.  Reduce the heat and simmer for 30 minutes. Turkey "Meat":
  1. Preheat oven to 350 degree
  2. In a blender, combine all the wet ingredients until completely smooth. Set aside.
  3. In a bowl or food processor, mix the dry ingredients. Add the wet to the dry and combine. Continue mixing until a dough ball is formed. Once ball is formed, kneed until the dough becomes elastic.
  4. Take the dough ball and wrap in heavy duty aluminum foil, making sure to tuck in and crimp the edges as you go. Multiple tight layers of aluminum foil would help. Add the dough ball to the oven and bake for 30 minutes. Then remove the turkey from the oven. Allow to cool until it can be handled safely.
  5. Unwrap the turkey and place it in the simmering broth for 30 minutes. Remove the turkey from the broth and allow to cool. Then place it in the fridge for 8 hours until firm.
  6. Finish the turkey in a butter, tamari glaze or serve as is.
Vegan Gravy  Ingredients
  • 1/4 cup vegetable oil
  • 1/4 cup whole wheat pastry flour
  • 2 cups simmering broth (strained)
  1. In a sauce pan, over medium heat, combine the oil and flour.
  2. Whisk together until combined and continue whisking for 1 more minute
  3. Slowly add in cooled broth, whisking constantly until no lumps remain and the gravy thickens.
